Vegans; What food to you take to work or school?!
BQ: Do you focus more on taste or nutrition when preparing your lunches?

I have a thermos that I use a lot for pasta, leftover casseroles and whatnot, soup, or bean chili.
Another common main is a veggie sandwich or wrap with leftover fake meat or leftover tofu/tempeh- tempeh bacon, bbq tofu, etc. Sometimes it's hummus and veggies, or a pita bread with hummus, chickpeas, and corn. Nut butter & jam/fruit sandwiches are easy too. Chickpea salad goes well on sandwiches too- there are a few recipes on vegweb.
The best way I keep my lunches varied is to make vast amounts of packable foods over the weekend- soups, chilis, tempeh bacon, etc, so its eays to pack- I never have a lot of time during the week.
Sides include trail mix, soy or coconut milk yogurt, crackers with nut butter or bean dip, bean salads, veggies with dip, fresh fruit, dried fruit, fruit leathers, granola, dry cereals, popcorn (no butter), pickles, a slice of bread (like banana-nut bread, not regular), walnut-date rolls, 1 or 2 mini-muffins, wasabi peas/edamame, or baked chips with salsa/guacamole.
And once in a while I throw some candy or a cookie/brownie in there, who doesn't? :)
BQ- I just try to find a medium. If I went solely on taste, I would have brownies and white bread and lots of very salty, sugary and fatty things. If I went solely on nutrition, I would be packing- you know, steamed broccoli, leafy greens, etc. And if I try to go too long without junk food, I end up getting bad cravings and binge on it, so... I'm middle ground :) I do try to limit dessert to 1-3 times a week, though, and track calories/nutrients.
Dr. McDougall's (all of his soups are vegan) Miso soup, a salad with Morning star farms vegan chicken strips and italian dressing. You put the Vegan chick'n strips in a pan with olive oil and cook them until they're a little brown. They taste amazing. I usually just take whatever leftovers I have...just toss some in a microwavable bowl quick before I leave or the night before. If I don't really have much, then I might just grab a vegan yogurt & some fruit, maybe carrot sticks or something like that. I always keep stuff in my locker at work too for when I don't have time to grab anything in the morning or forget. Things like instant oatmeal packets, ramen style packets that have noodles (usually udon or something), seasoning, and a slab of dried tofu that rehydrates in the microwave, and various snacks like nuts, trail mix, crackers, etc. I also keep a bag of 8-10 slices of bread in the freezer & pb & jam in the fridge at work just in case. Plus, there's a dollar store, Subway, and Taco Bell very close to where I work, so if I don't have anything I'll walk over to one of them to get something. Not the greatest lunch, but it's better than nothing. :)
My work lunches are usually tasty *and* nutritious. I don't focus on either. I just focus on having something to eat that will sustain me to get through the second half of my workday. But, like I said, I usually take leftovers which are good full meals. I tend to have a larger lunch and smaller dinner anyway.
As an example, last week for work I took
Left overs from dinner so:
Basic rice and beans (and tofurky sausage)
veggie soup
stir fry with tofu etc...
And I also bring fresh fruit :)
Plus some raisins to keep in my back pack for emergencies

i usually foucus in both nutrition and the taste...mostly i would bring a fruite salad and a vegetable salad with some olive oil dressing
Mainly fruit, vegies and nuts. Vegemite or salad sandwich. I focus more on nutrition and tell myself food is fuel and each meal does not have to be my gourmet favourite.
