Is "gluten free" food considered a starch?!

Question: Is "gluten free" food considered a starch?
My Dr. put me on an all vegan diet with no starches. If the starches (noodles, crackers, breads) are gluten free, is it still considered a starch? Please help!! I'm totally new at the whole, healthy eating thing.

"Gluten-free" does not automatically mean that the food is not a starch. There are many grains that are gluten free, and even some vegetables, for example, corn or potatoes. They're still considered starchy foods. You should talk to your doctor more about what you should or shouldn't eat (I can't believe he didn't explain it better in the first place) for whatever reason it is.

And by the way, you can certainly have "healthy eating" habits without eliminating starches or gluten altogether (unless you have a sensitivity/allergy to gluten).

Yes its still a starch, gluten just gives the food an elastic texture
