Simple, delicious vegetarian fillings for a tortilla wrap?!

Question: Simple, delicious vegetarian fillings for a tortilla wrap?
It has to be simple! Nothing too complicated, but all in all, it has to be delicious and vegetarian!!

Answers:

Grated cheese, coriander/cilantro, sprinkling of freshly diced red chillies, thinly sliced red peppers

put a tortilla under the grill, toast it slighly, sprinkle on the ingredients above, back under the grill again to melt and bubble, top with a tortilla, back under the grill to toast. Slice up like a pizza.

It's called a Quesedilla and I make them about once a month and then again the next day because I love them so much. Google it.

Quorn cooked with ground spices (a half-teaspoon each of cayenne pepper, cumin, coriander, paprika, and chilli powder) and a couple of tablespoons of salsa sauce.

Fry the Quorn pieces for a couple of minutes then add the spices and the salsa, simmer for a couple of minutes. Or you could use chunks of vegetables instead e.g. peppers (bell peppers), onions, zucchinis, etc.

I pretty much do the same thing with chicken

I usually bake some Tofu thats been covered in Tamari, throw some brown mustard/veganaise down on on the wrap. Last night I just threw some ingredients together it looked kinda like this :
1 Ezekiel Mexican Style Tortilla
Tofu Baked with Tamari and a small amount of Tahini
Baked Sweet Potato
Eden Brown Mustard
Alfalfa Sprouts
Lettuce/Spinach Mix
Veganaise
Tiny bit of Ketchup
Brown Rice

Came out pretty tasty. You can also buy some refried beans, Amy's Kitchen makes some amazing vegan refried beans :)
