2 cups romaine lettuce
1/4 cup chopped onion
1/4 cup shredded carrots
1/4 cup olives
1/2 cup hard-boiled egg
1 cup sliced chicken
2 tablespoons Ranch dressing



You can make a salad out of most anything. Combinations I like:

crushed pineapple
orange segments
Craisins
coconut
yogurt

Mix and chill.

cooked tortellini
chopped green peppers
chopped red onions
oil
vinegar

Mix and chill

One can whole-kernel corn
One can black beans, rinsed and drained
One sweet onion, diced
One red or green pepper, diced
1/3 cup sugar
1/3 cup vinegar
1/3 cup oil

Mix the liquids together until the sugar dissolves; pour over the vegetables; mix thoroughly and chill.

One apple, cored and sliced thin
Two stalks celery, sliced
1/2 cup carrots, sliced or shredded
1/4 cup mayonnaise
1/4 cup Craisins or Sultanas

Mix well and chill.



2 to 4 green apples, a bunch of spinach and a cup of grapes with gorgonzola, walnuts and dressing on it, A simple lettuce and lemon juice salad, a Greek salad of lettuce, tomatoes, feta, cucumbers and olives, Turkish salad of tomatoes, cucumbers and pepper or bean salad of pasta, chickpeas, kidney beans and tomato.



Here's a super easy fun salad:

Bunch of Arugula
5-6 Sliced Strawberries
1/4 cup Gorgonzola
Small handful of walnuts or almonds
(dressing) 3 Tablespoons of Pesto mix in with 1/2 of a juiced lemon

Toss and Eat



Arugula, beets, green apple chunks, and candied pecans.
Toss this with a lemon-pomagranate dressing, it's AMAZING.
