EASY MEAL FOR SOMEONE UNFAMILIAR WITH VEGETARIAN COOKING?!
So I have a son who is going to be 18 in 2 weeks, and his 3 year anniversary eating vegetarian is this Thursday. I am proud of his accomplishment, even though I am not a vegetarian and I'd like to make him a special meal to honor his anniversary. Can you guys please shoot me some ideas? I'm thinking of a casserole or dish that can be eaten alone, and maybe with a meat for the rest of the family so I am not cooking 2 separate meals. Over the last 3 years, I have basically cooked the same foods as always, I just make extra veggies so he basically has a veggie plate. I want something different for this meal though. I want this meal to be about him!

I think that is so wonderful that you are doing this for your son. I wish my parents were this supportive of my being a vegetarian. It might be nice if the whole family ate vegetarian for the meal to really show that it is a family celebration. Anyway, just my 2 cents. Best of luck!

You can do a fabulous vegetable lasagna. Have some Italian sausage on the side for the folks who insist on meat with the meal. Serve with a salad and garlic bread. Mmmmm.
There are lots of different styles of veggie lasagna. Google to find a recipe that you like. Some are with a red sauce and some are with a white sauce. The white one will be richer.

I LOVE this vegetarian recipe. My aunt made it for me at a holiday dinner and I made it about 4 times ever since then. I'm not sure if he likes swiss chard or spinach, but this recipe contains it. If you can't find swiss chard, spinach will work just fine. It also has beans, which I'm not sure what he would like.
