The healthiest way to be a vegetarian is to eat a lot of fruits and vegetables (at least 9 servings a day combined), a cup of beans a day, 1-2 ounces nuts/seeds a day, and limit starchy foods like potatoes or bread to 1 serving a day. If you're not vegan, it's best to limit animal products to 10% or less. Your focus, whether vegan, vegetarian or omnivore should be becoming a "nutritarian"--someone with a micronutrient- and phytochemical rich diet. If you are borderline underweight, you increase your content of foods that are high in both fat and nutrients such as nuts and seeds, and healthy caloric beverages such as smoothies made with almond milk.
If you like the taste of meat, there are meat analogs (fake meats) you'll probably like. There's vegan: "chicken", hotdogs, burgers, "bacon", phony pepperoni, etc. But if you had an eating pattern where the focus of your meal was meat with a bit of vegetables around it, it's best to not repeat that with the meat analogs. Use them more as a condiment.
Also, a big mistake of some vegetarians is to fill up on dairy, which is not healthy, as casein (protein) and galatose (dairy sugar) are carcinogenic. (See "The China Study" by T. Being a vegetarian will make you healthier. The largest land animal is not underweight, but is a vegetarian...the elephant.
It is your choice to either be vegetarian or not. Once you make a decision, no one can stop you being one or the other, not even your tongue.
