Most vegetarians are lacto ovo vegetarians. Lacto means milk and ovo means egg. These vegetarians don't eat meat (not even chicken and fish) but they will eat dairy and eggs. Vegetarians don't eat gelatin because it is made by using parts of slaughtered animals. Lots of yogurt has gelatin but not all of it so you would have to read the label.
There are lacto vegetarians who will eat dairy but not eggs and there are ovo vegetarians who will eat eggs but not dairy.
Some cheese is not vegetarian because it is made with animal rennet that came from slaughtered animals.
Vegans don't eat meat (not even chicken and fish) or anything that comes from an animal. They don't eat eggs, dairy or honey. They also don't buy things with wool, feathers, silk or leather because these things come from animals and they don't buy products that were tested on animals.

The main difference between veganism and vegetarianism is that vegetarianism is a diet where as veganism is a life style.
Vegans don't consume foods that come from animals or foods that contain additives from animals. So no eggs, no dairy, obviously no meat (that means fish too), no honey, and no animal based additives. The additives can be tricky. I'll give you an example... in Doritos the "Natural Flavorings" are partially derived from pork enzymes, and some red food colorings are derived from insects... the key is sticking to simple foods with labels you understand.
Other than diet vegans don't wear fur or leather... or any other animal parts. Many also avoid things tested on animals like cosmetics and beauty products. This can be as simple as avoiding mascara that hundreds of bunnies had to be blinded to be tested for safety, or as extreme as not buying most jewelry because the shines used on prepping them are animal derived.
There are some great resources to help you along your way to veganism in the sources... cheers!

If you want to be vegan, you have to cut ALL foods that come from animals and also stop purchasing other animal products as best as you are able. (Stop buying leather and wool, and avoid cosmetics and other products that contain animal products or were tested on animals. Please do not quite a medication without consulting your doctor, though.)
Vegetarian- not eating meat of any kind (ie- no fish, chicken, beef, pork, lamb, veal...you get the gist)
Vegan- not eating meat of any kind + not eating any animal by products (ie- any dairy products)
*Some vegans go so far as to not use any products from an animal (such as beauty products, leather/ any clothing coming from material from an animal)
In order to be vegan, you have to avoid EVERYTHING that comes from an animal, or is fried in animal fat and such; eggs, milk, and anything else.
i can tell you the answer to the first question
vegans don't touch ANYTHING that has to do with animals, no leather, no eggs, dairy, etc. you'd have to google the question about what else you'd cut out
