Also, take something like a stuffing mushroom & stuff it with couscous or quinoa, chopped garlic, onion & red pepper, or grape tomatoes cored & stuffed with hummus. Tabouleh is also a good appetizer.
You could also chop up some veggies, dip them in soy milk, almond milk, or rice milk, then in soy flour or almond flour, & fry them. It's utterly delicious.
A fruit platter is also a fun appetizer.
In the end, if you find a recipe you like, and recipe at all, substitue all dairy for soy milk or almond milk (I find rice milk to be too thin), and wheat like flour for soy flour or almond flour (I find almond flour to be more like a cornmeal consistency).
