It's not really a matter of WHICH vegetables you steam, but HOW you steam them. Try to keep the vegetables as whole as possible when you steam them. Buy them as fresh as you can. Whatever you do, don't immerse them in water, it pulls out the nutrients. I use a metal colander inside of a pot and about an inch of water, making sure my veggies won't touch. And never steam the food until it's soft or soggy, try to retain some of the firmness. The starch in the food keeps it firm, so if your food becomes soft, you've lost the battle, but not the war! Also, it's best to make sure the food doesn't go beyond the point of losing it's vibrant color. Unless you eat them raw, you'll always lose a few nutrients here & there, no matter the veggie.



Steamed broccoli is great! Steaming is a great way for vegetables to retain their nutrients.



None. As soon as you cook them, they lose some of the vitamin content, although very little.
