Answers:

Make Guacamole

Cube avocado and and chop some red onions or shallots, cilantro. Add black beans, sea salt, and lemon juice.
I use organic sea salted blue tortilla chips from natures promise with the avocado dip.

Also, slice avocado into salads. Or, Slice avocado up and just sprinkle the slices with sea salt.

Mash up half an avocado with a fork and add a little salt and pepper to taste. Then, spread it across a couple of pieces of whole grain toast for breakfast.

Add avo to an omelet. If you prefer the taste of uncooked avocado add it to the top of your omelet instead. Dice up the avocado and add the pieces on top of your omelet once it has been cooked.

Put avo on top of black bean soup for richness.

Slip a few slices into a sandwich in place of mayonnaise for a creamy appeal.

Add it to a green salad, simply slice a quarter of a red onion along with three avocados. Arrange the slices on a plate and drizzle with one tablespoon each of olive oil and red wine vinegar, Finish with a light sprinkling of salt and pepper.

Dice apples, strawberries, peaches, avocado and add grapes to a fruit bowl. Add sliced almonds or crunchy walnuts and drizzle honey over the whole thing.

Cut your avocado down the middle, remove the pit from the center. Get creative and add filling to your avocado based on your food preferences. This is another great and creative way to serve fruit salad, use the hollowed out avocado as your dish. Cheese, bacon bits, and carrot shavings, prawns with mayo etc are all great ways to fill up your avocado.

Make an avo salsa - Mix a diced avocado (sprinkled with lime juice) with a diced mango and add diced red onions and a pepper of sorts (such as habanera, jalapeno, or red pepper). Add some cilantro and salt to taste.

Add big chunks of avocado in fajitas/ wraps / tacos / tortillas

Make an avo wrap - Fill a whole wheat tortilla with avo & veggies of your choice

Cold avo soup - 4 ripe avos, juice from one lemon, 2 1/2 cups chilled vegetable broth, dash cayenne pepper, 1 1/2 cups cream, 2 tbsp chopped fresh parsley, dash salt and pepper - blend & serve cold

Guacamole is awesome. There are hundreds of different ways to make it, so you can make it to your own liking. It also can be used for much more than just tortilla chip dip.

I watched a documentary that Woody Harrelson did called "Go Further," and they made a raw dessert with avocado and chocolate. It looked awesome.

Use a search engine for avocado recipes. I always find fun things to make that way. Last food of the week was 'tomatillo.'

I also like to slice ripe avocado right into a salad or blend it into my morning shake.

My shake on most days:
Raw granola mixes
Hemp seed powder
Soy milk
Molasses or honey

My shake on some days contains the above and can include any of the following:
Avocado :D
Carrots
Peaches
Kiwi
Cantaloupe
Honey dew
Zucchini
Bananas
Sweet potatoes
Berries
Seeds

It sounds crazy, but it tastes like oatmeal with fruit. I throw it in the blender and drink it for breakfast(easier with a new baby). My husband used to make the 'eww' face, too until he tasted it. He used to only eat those microwave oatmeal packets. He still does, but he likes my shakes, too.

I like to slightly toast a slice of bread, spread mashed avocado on the bread, toast the bread again with the avocado in the broiler, and then sprinkle spike and sea salt or another herbal mixture on top. This also tastes great with alfalfa sprouts and/or a vegetarian cheese/vegan cheese alternative.

Add it to sandwiches with cheese, bacon, chicken or fish, or just a bunch of salad.

Dip veg sticks or crackers in guacamole for snacks.

Make tlayudas (folded Mexican pizzas) by spreading guacamole on a hot flatbread in a frying pan/skillet and topping with sunblush tomatoes, spinach, mozzarella, cheddar, chicken, salad leaves (or any combination, or whatever you like!) then folding.

Add to salads, or side salads for your main meals.

Avocado with prawn cocktail sauce (sans prawns of course)

I just slice them into virtually anything - bear in mind they contain fat (the only fruit that does) so you might want to limit how many you have daily. Or mash them - with a little lemon juuice otherwise they go a rather grim colour.

I used to Hate Avocado. . . until I had it on ceviche! Then I started buying mini avocados and put them on my sandwiches by slicing them thin. To keep them, I used Glad Press N Seal, and now they are a staple item in my kitchen. Sunday breakfast is normally Eggs Benny topped with Pico de Gallo and 'Cado!!

You can eat guacamole with almost anything snacky.
