Stay away from the fried foods such as spring rolls, chow mein, etc. They could be deep fried and in animal oils (such as lard).

ok you need to go here
veganeatingout.com
and here
happycow.net
because lots of Chinese places have menu items that LOOK vegetarian but arent (ie Panda Express has an Eggplant Tofu dish---its NOT vegetarian, nor is their Chow Mein. nothing except the white rice is vegetarian there (you can verify that for yourself on their website. i was pretty pissed off when i found out))

Mock meat! There are awesome mock meat dishes, sweet and sour pork or chicken omg.
Also if you go to ordinary chinese restaurant you can just ask them not to use animal products when you order. Say no fish sauce, no oyster sauce and you are good to go.

Honest answer. Probably no meals are truly vegetarian from your local average Chinese restaurant, that is, unless you go to one related to Buddhism. The local ones more often than not will use animal based oils.

Eggplant, vegetable dishes, tofu hotpots, soup

Noodles, Manchuria, Fried Rice. =)

chicken teriyaki

Chinese Spring Rolls and Yam Cake. Veg and nice... YUM!!

Lo Mein
Fried Rice
cabbage rolls

If you're making your own at home, there's plenty of foods you can make. But if you're going out (especially eating Mandarin), they use animal fat, chicken/beef bases, flavors, and fish ingredients... Even in vegetable dishes.

Spring rolls can be listed as "vegetarian", with only "vegetables and tofu", but their definition of vegetarian includes oyster sauce and chicken stock. Things like that =)

Egg or vegetable fried rice, noodles, veggie spring rolls, fried tofu with garlic sauce, sauteed string beans, white rice, miso soup, orange peel tofu...

Also- if u eat fish there are also plenty of seafood entrees! Spring rolls, general tso shrimp...

vege omelettes and mixed vegies in garlic sauce and sweet and sour sauce w/ vegetarian fried rice

oh goodness, pastas!!!!! Lots of chinese pastas.
