Question: Hey whats a good egg plant recipe?
A vegitarian egg plant recipe please.

Eggplant parmigiana.

Dip slices in egg yolk& breadcrumbs, then pan fry.
THEN cover with tomato sauce & mozzarella cheese & bake in the oven.



Eggplant saute panini.

Saute together eggplant, onions, roasted red peppers and sundried tomato. (I use the sundried tomato in olive oil, and use that as the saute oil)
Put mozzarella cheese (or soy cheese for vegan) on two slices of bread, put the saute in the middle, cook on a panini maker or in a fry pan like you would a grilled cheese sandwich.
This is really good with tomato basil soup.

You can also add some kalamata olives to this if you like those, I've made it that way and it's good..I'm just not a big olive fan.

I love it grilled! Cut into wide strips, brush with Olive oil, sprinkle with some Sea Salt and Cracked Pepper and grill for a few minutes per side! Don't have a grill, use a george foreman!

Basically, when I really want to go meat free, I just use Eggplant or portabello as a replacement.

Eggplant Lasagna, Eggplant Fettuccine, Eggplant stir fry. . . the list goes on and on!
