Question: I'm struggling here on what to eat healthy as a vegetarian and gained some weight. Need suggestions on food?
I've never been an eat meater so going vegetarian is easy, it's just what to eat and NOT to eat that is confusing me. I've gained some weight in the last couple of weeks since going vegetarian. I'm 5'1" and weight 118 lbs. I found I'm filling myself up on bread, pasta and cheese pizza, all carbs. What are the healthy foods that I should be eating and what foods should I avoid other than what I have listed above. Any suggestions would be appreciated.

Okay for starters, replace that bread and pasta with a whole grain version. Easy.

Try not to eat pizza anymore except just occasionally. I know it tastes SO GOOD but it doesn't have very much redeeming nutritional value and it is addictive so just avoid it as much as possible.

I eat a spinach salad just about every day. It's a good habit I think. Just watch out for fattening salad dressings. I use a little olive oil and red wine vinegar for dressing.

Incorporate some beans and other legumes into your eating. Vegetarian chili, veggie soup with lentils, bean burritos, etc. Good stuff, very healthy.

I love, love, love making my own spring rolls (the non-fried kind)! They're easy and so good for you (depending on what ingredients you use). I can eat them 5 nights a week because they are so versatile. There are tons of recipes online, find one you like and you won't regret it. One tip though: when storing make sure to wrap eat one in a damp paper towel then refrigerate or they will harden and not taste as delicious.
Also, I do a lot of Mediterranean food: hummus, olives, marinated veggies, and put them on a low carb tortilla, you can add feta if you aren't vegan and it is like a healthy pizza.

Carbs are necessary, but if you're going to eat things such as bread and pasta, make sure they're whole wheat and brown rice. The only simple carbs you should eat are fruits and a dessert once in a while. Make sure you stay away from things such as gelatin, rennet, gravy - all slaughter by-products.
Keep your dairy intake as low as possible; dairy is truly not good for you at all. Eat plenty of vegetables. If you don't like plain vegetables, use hummus with them.
Remember only whole grains, not refined and processed crap.

Not incorporating protein is a huge mistake (try nuts, tofu, beans, legumes, peanut butter). On an almost all carbohydrate diet is that all unused carbs(sugar) will turn into fat especially if youre not counting calories. ill add more later i gotta work



Cut back on the cheese - if you can manage eggs these are better. Plenty of soya protein - easy on the salt - and don't overdo the wheat. Try oat cereals and more vegetables.



You can still eat tasty foods, but make em healthier!!
I make my own pizzas, and make my own tomatoe sauce with chopped tomatoes, garlic and herbs and a bunch of veggies, blended up. Then add tons of veggies ontop and just a sprinkling of cheese.
You can do the same thing with pasta - use wholewheat pasta, and make a sauce with tons of veggies in, blended up.
IMO it's much much healthier to cook your meals from scratch - if you don't have much time, make large batches and freeze stuff for a later date.
You should probably think about eating more protein, as it sounds like your diet is quite heavily based around carbs and fatty dairy products.
Things like nuts can be snacked on through the day, as can veggies with hummus.
One of my favorite recepies is bean burritos - cook a can of kidney beans and a can of chickpeas with some garlic, chopped tomatoes,tomatoe paste, cumin and chilli. Wrap in tortillas, with some low-fat cheese and salad.
If you make a few extra without the cheese and salad, you can wrap them up and freeze them - just microwave for a couple minutes for a healthy snack.



You should be eating vegetables, peas, beans, tomatoes, broccoli, etc. They are high in vitamins you need, plus low in calories. Eating any kind of processed grains is not good. Whole wheat may be "better", but that whole wheat bread is going to turn to sugar just like the white bread.

Don't build your diet around soy products. In excess, they can certainly affect your thyroid and possibly cause other problems. Soy is often recommended to women for treatment of menopause symptoms! The state of Illinois started feeding their prison population fake soy products (bacon, hot dogs, burgers, etc.) instead of meat and made a lot of them sick. Plus it's high in oxalates which inhibits your body's ability to absorb calcium and iron.
