Ideas for a vegetarian/vegan potluck?!

Here are some salad recipes. I guess it's Summer here. Not sure what the weather's like where you are!
1 cup white or brown rice
2 white onions
250 grams sprouts (about half a bag)
2 tbsp sugar (it's vegan in Aus -- whatever you're using)
2 tbsp vegetable oil
2 tbsp soy sauce
2 tbsp pine nuts
1 tbsp sesame seeds
Lemon juice
* Cook rice
* Chop onions in quarters and then slice
Add with oil and soy sauce and sugar to small saucepan
Sautée the onions until caramelised -- all soft and brown. I use a chopstick.
* Spray a bit of oil onto fry pan
Lightly toast pine nuts -- try not to burn
Put toasted pine nuts onto paper towel
Turn off smoke alarm with broom
Use oil in fry pan to toast sesame seeds
Put sesame seeds onto paper towel
* Boil maybe a couple of cups of water
Pick of ends of sprouts -- if you can be bothered (the recipe says to, I think this is boring)
"Blanch" sprouts, i.e. soak in boiling water in bowl for 30 seconds
Drain
* For the dressing use lemon juice to taste. The recipe says to add oil but I don't think it's necessary.
* Add everything together in a bowl. YUM.
Sorry I don't have the exact recipe with me -- I've forgotten it. I tend to just mess around in the kitchen with proportions and stuff. My mum used to make it and now it's my friends' standard favourite at their friends' parties. They use brown rice instead of white -- it's up to you.

Or I make a simple bean salad with tinned borlotti beans, frozen garden peas, a red bell pepper, 1/2 red onion & a bunch of coriander (cilantro) w/ lemon juice & salt n pepper dressing. Easy!

A bog rice salad.
Brown rice, sweetcorn, chickpeas, diced onion, strips of roasted yellow and red peppers, sesame seeds, peanuts, and a dressing of soysauce and vinaegrette.
If you use black and wild rice, it looks very pretty.
I usually bring some crudites, chips or crackers and hummus. If you eat dairy you could do a cheese ball instead of or as well.
