Question: Easy meals for military families?
I am looking to take meals once or twice a week to a local family whose husband/father is deployed to Afghanistan. The mother is a vegetarian so I am looking for simple meal suggestions that I can make and take over to his wife and two young daughters, ages 4 and 2. Does anyone have any suggestions for casseroles etc. that they can just warm up easily or other quick meal suggestions? Both of the girls eat meat, just the mother does not, so if there is a meal where the meal is an optional thing that would work too. Thank you!

My all time favorite vegetarian meal that is also loved by meat lovers is tofu vegetable stir fry. Get a package of firm or extra-firm tofu and drain it. Marinate it in BBQ sauce or soy sauce or teriyaki sauce or whatever kind of vegetarian sauce you think they would like. Marinate for as little as ten minutes or as long as overnight. Get any veggies that can be stir fried. I use broccoli, red bell peppers, carrots, mini corns, water chestnuts, squash, zucchini, onions, snap peas (or green beans). You can use anything. After the tofu is marinated and the veggies are cut up into bite-size pieces, throw about a tablespoon of olive oil in a large skillet and let it heat on medium-high to high. Throw in the densest veggies first (broccoli, carrots) and give them a head start. I know that if I throw everything in at once, the broccoli and carrots are not cooked enough when everything else is done. Be mindful and stir as often as you can so they don't burn. Throw the rest of the veggies and the tofu in. You can cook uncovered (or covered for a steamed veggie stir fry) until everything is soft enough to poke with a fork but not overly mushy. It really doesn't take long to cook-5 to 10 minutes. This can be served over rice or pasta. I always eat mine with mei fun noodles or egg noodles.
