Question: Quick and easy recipes for vegans?
So I was wondering if anyone had some quick and easy recipes for vegans? Or some favorite ingredients, or anything really as im a new vegan.

Favorite ingredients: fresh vegetables, chickpeas, red lentils, tempeh, really good tofu (e.g. from Fresh Tofu, Inc.), almond milk, full-fat coconut milk, garlic, spices, miso, and tamari.

Recipes are endless. Anything by Isa Chandra Moskowitz or Terry Hope Romero of the Post Punk Kitchen is usually good, and Joanne Stepaniak has many good (and usually milder) recipes, too.

Here is my favorite easy and cheap recipe. I usually serve it with a mound of steamed greens to add balance to the meal:

Peanut butter pasta, adapted from Vegetarian Express by Nava Atlas and Lillian Kayte

12 oz spiral or shell pasta
2/3 cup peanut butter (crunchy or smooth)
3/4 cup water
3-4 Tbsp. soy sauce (any kind)
2 Tbsp. apple cider, rice, or white wine vinegar
2 green onions, sliced
1 tsp. sugar or agave
1/2 tsp. ground ginger (or 1/2 Tbsp. fresh, minced)
1/2 tsp. chili powder
1 1/2 cup frozen green peas.

Begin cooking pasta. Meanwhile, whisk together remaining ingredients, except for peas, green onions, and hot pepper sauce. Either heat them in their own saucepan, or reserve in bowl to heat in pasta pot.

When pasta is nearly done, add peas to the cooking water to thaw them. Drain.

Heat sauce in saucepan, if necessary, and return pasta and peas to pot, stirring until well combined.

Garnish individual servings with green onion and hot pepper sauce.
