Question: I have a block of tempeh, but no soy sauce. What can I make?
Every recipe I know calls for at least a little soy sauce, but I am visiting friends and we don't have any. There is no wine or vegetable broth, either. We do have garlic, olive oil, prepared peanut sauce, and a little hot sauce, plus various herbs and spices.

I need a vegan recipe. Thanks!

Answers:

You can just slice the block into 1/4 inch thick pieces and fry in some oil. Then toss in a mix of hot sauce with melted butter or dijon mustard. It's sort of like buffalo "tenders". Dip in ranch or similar sauce after.



Lemon Garlic Tempeh

Ingredients

1 block Tempeh (poached optional)
1 lemon squeezed
2-4 cloves garlic chopped
1/3 cup olive oil
1/2 teaspoon dried basil
salt and pepper to taste

Directions:

Slice tempeh into thin slices.

Wisk lemon, oil, garlic, basil, and S & P.

Marinate Tempeh for about 10 minutes.

Brown tempeh in a hot skillet for about 5 minutes on each side, adding the marinade until all is gone. The garlic should be browned too.

Serve over noodles, rice, lentils or veggies.

NOTE: if tempeh is hard on your stomach or you want it to be softer, poach the tempeh in water for about 20 minutes and then drain.

Serves: 2-4



As far as I know, there's no law that says you have to cook tempeh in soy sauce. I always cook tempeh or tofu in olive oil (which you have) or vegetable oil.
When making stirfry I never rely on others' recipes, it's all about what I have and the measuring goes by my taste buds. With the garlic, peanut sauce, hot sauce, herbs and spices, you are going to have plenty. All you need is rice, but I suppose it's just fine plain, if not more healthy without any starches.

Edit: Soy sauce is liquid salt (basically) and sodium is best avoided. I love to season with vinegar (usually white) and or fresh lemon/lime juice.

Vegan



You could slice up the block, fry in olive or coconut oil, and then crumble up in a bowl and make a sandwich spread. Add mayonaisse (sour cream, yogurt, or combination of), mustard, salt & pepper, any fresh herbs you like and combine (omit mayo if vegan). Spread on bread and add all the filling you like - lettuce, tomato, pickle, saurkraut, hummus, avocado, guacamole, etc.



Go to eatingwell.com and search for the sesame honey tempeh and quinoa bowl. I use agave instead of honey. Even if you just want the tempeh and not the quinoa and carrot slaw, it is so good!! And really easy. It was the first time I ever had tempeh, and even my bf who isn't a vegetarian loved it!
