Here's a recipe from Better Homes and Gardens
Ingredients:
* 2 cups all-purpose flour
* 2 cups sugar
* 1 teaspoon baking soda
* 1/4 teaspoon salt
* 1 cup water
* 1 cup butter
* 1/3 cup unsweetened cocoa powder
* 2 eggs
* 1/2 cup buttermilk
* 1-1/2 teaspoon vanilla
* 1 recipe Chocolate-Buttermilk Frosting
Directions
1. Preheat oven to 350 degrees F. Grease a 15x10x1-inch or a 13x9x2-inch baking pan; set aside. In a medium bowl, combine flour, sugar, baking soda, and salt; set aside.
2. In a medium saucepan combine water, butter, and cocoa powder. Bring mixture just to boiling, stirring constantly. Remove from heat. Add the cocoa mixture to the flour mixture. Beat with an electric mixer on medium speed until combined. Add the eggs, buttermilk, and vanilla. Beat for 1 minute (batter will be thin). Pour batter into prepared baking pan.
3. Bake about 25 minutes for the 15x10x1-inch pan, about 35 minutes for the 13x9x2-inch pan, or until a wooden toothpick inserted in the center comes out clean.
4. Pour warm Chocolate-Buttermilk Frosting over the warm brownies, spreading evenly. Cool completely in pan on a wire rack. Cut into bars. Makes 24 brownies.
5. Chocolate-Buttermilk Frosting: In a medium saucepan combine 1/4 cup butter, 3 tablespoons unsweetened cocoa powder, and 3 tablespoons buttermilk or sour milk. Bring mixture to boiling. Remove from heat. Add 2-1/4 cups powdered sugar and 1/2 teaspoon vanilla. Beat with an electric mixer on medium to high speed until smooth. If desired, stir in 3/4 cup coarsely chopped pecans.
6. Note: To make 1 cup sour milk, place 1 tablespoon lemon juice or vinegar in a glass measuring cup. Add enough milk to make 1 cup total liquid; stir. Let mixture stand for 5 minutes before using. Use 1/2 cup sour milk in the brownies and 3 tablespoons sour milk in the frosting. Discard remaining sour milk. Or reconstitute dry buttermilk by following the directions on the powdered buttermilk container.

Quick Low Calorie Cold Borscht Recipe
Ingredients
* 1 quart of buttermilk - 1% for reduced fat
* 1 can shoe string beets with juice - sliced are fine - but cut into shoe strings
* 1/4 cup of water
* 2 tbsp of white vinegar
* 2 oz of paper thin sliced cucumber
* 2 green onions chopped
* 2 hard boiled eggs
* 2 sprigs of fresh dill - chopped finely
* Salt & Pepper to taste
Preparation time - 10 minutes
1. While the eggs are cooking, the following can be prepared.
2. Into a large serving bowl, empty the can of shoe string beets with the juice. To the bowl, add the quart of buttermilk. To the empty container, add about 1/4 cup of water and shake it up quickly to rinse the remaining buttermilk and then empty into the serving bowl. Add the sliced cucumber, chopped green onions and 2 tbsp of vinegar.
3. The eggs should be ready by now. Run cold water over them, shell them, chop one of them coarsely and add to serving bowl. Save the second egg to garnish soup by slicing into sections. Stir the contents and season to taste with salt and pepper.
4. The hard boiled egg may still be somewhat warm when added to the soup. Be sure to let the soup chill before serving or add a couple of ice cubes to accelerate the chilling process.
Serving 4
This soup is a gorgeous pink! To highlight its color, serve in white or clear bowls. As garnish, add hard boiled egg sections and sprinkle with chopped dill. Enjoy!

Buttermilk Fried Chicken Recipe
Ingredients
1 (3 pound) fryer cut into pieces
2 cups buttermilk
1 large onion, sliced
1/4 cup chopped mixed fresh herbs (parsley, tarragon, thyme) or a teaspoon each of the dried herbs.
1/2 teaspoon paprika
1/2 teaspoon cayenne pepper
2 cups flour
1/2 teaspoon garlic salt
1/2 teaspoon onion salt
1 teaspoon cayenne pepper
Salt and pepper
2 cups grapeseed oil, or other high smoke-point oil such as canola oil, or peanut oil
Method
1 Soak chicken overnight (at least 8 hours and up to two days) in buttermilk with onions, herbs, paprika, and cayenne pepper.
2 Drain in colander, leaving some herbs on chicken. In a large paper or plastic (sturdy) bag, mix flour with seasonings. Meanwhile, heat 2 cups oil in a large, heavy-bottomed skillet (cast iron, stainless steel, or anodized aluminum - something that can take the heat) on medium high heat until a pinch of flour starts to sizzle when dropped in the hot oil (but not so hot that the pan is smoking). Remember when working with hot oil, always have a pan lid close by.
3 Place chicken pieces in bag with flour and shake until thoroughly coated. Add chicken to hot pan and fry on 1 side for 12-15 minutes, until golden brown, and then use tongs to turn the pieces over and fry for another 10-12 minutes, again until golden brown.
Be careful to keep the oil hot enough to fry the chicken, but not so high as it burns the chicken. To do this on our electric stove we have to alternate the settings between high to medium high several times while we are cooking.
4 Use tongs to remove chicken from pan. Place on a rack over a cookie sheet or broiling pan for the excess oil to drain. Add more salt and pepper to taste.
Serves 4.
