Question: Something healthy and vegetarian to have for dinner....?
i'm just out of hospital after a week and i always feel better once i eat something healthy and full of vegetables! problem is i was at a private hospital and am £2500 short so i can't spend that much on food! any good ideas? thanks!

Lots of veggies in this, and it will leave leftovers for several days if you like.


Pasta Primavera

3 carrots, peeled and cut into thin strips
2 medium zucchini or 1 large zucchini, cut into thin strips
2 yellow squash, cut into thin strips
1 onion, thinly sliced
1 yellow bell pepper, cut into thin strips
1 red bell pepper, cut into thin strips
1/4 cup olive oil
Kosher salt and freshly ground black pepper
1 tablespoon dried Italian seasoning
1 pound farfalle (bowtie) or any small regular or whole wheat pasta
15 cherry tomatoes, halved
1/2 cup grated Parmesan

Preheat the oven to 450 degrees F.

In a very large bowl toss all of the vegetables with the oil, salt, pepper, and dried herbs to coat. Transfer the vegetable mixture to 2 heavy large baking sheets and arrange evenly. Bake until the carrots are tender and the vegetables begin to brown, stirring after the first 10 minutes, about 20 minutes total.

Meanwhile, cook the pasta in a large pot of boiling salted water until al dente, tender but still firm to the bite, about 8 minutes, or to package directions. Drain, reserving 1 cup of the cooking liquid.

Toss the pasta with the vegetable mixtures in a large bowl to combine. Toss with the cherry tomatoes and enough reserved cooking liquid to moisten. Season the pasta with salt and pepper, to taste.

Sprinkle with the Parmesan and serve immediately.



You ca;n try a large fresh fruit plate, with maybe three different types on it, shouldn't be expensive. Try a bowl of home cooked beans, that would be super cheap and would be real good, A fresh veggie plate would also be good, maybe you already have some of these things at home. Something along these grounds, Make sure you are getting your protein.



hi i am a vegetarian and i mostly eat rice with gravy but mostly a salad oh yeah at burger king they have this salad its really good it have lettuce tomatoes crutons any sauce you want cheese its very good for just a $1!!!!!!!!!!!!!!!!!!
