I want to be a vegetarian/vegan but I don't really like many vegetables?!


Question: I want to be a vegetarian/vegan but I don't really like many vegetables?
Potatoes
Cauliflower
Broccoli
Peas
Peppers
Sweetcorn
Carrots
Cabbage

...That's about it.


P.s. I'm allergic to onions just in case anybody suggests them and I don't like celery because it's bland DX

i suggest you try zucchini and other forms of squash. how about salads? a spinach salad would be really good for you. i understand you like very many veggies, but how about fruit? an apple and a banana a day will provide many nutrients. how about legumes? you will need protein if you go vegan. legumes (beans) are an excellent form of protein. lentils being the best. since you like carrots and potatoes you can make an excellent lentil soup w/ potatoes and carrots. i always add celery too, but you say you don't like it. which is funny because the only reason i add celery is for flavor. celery has excellent healing properties. try different grains. quinoa is the best. nuts are wonderful as well. you can make all sorts of fruit smoothies and sneak veggies in there, you can sneak spinach or parsley in your fruit smoothies.



If you like cauliflower, broccoli & cabbage chances are you'll like brussel sprouts (yum!) Just steam them & roll them in a little butter. Also experiment with Portabello mushrooms. They are delicious and have a meat like texture. They're great marinated and treated like burgers.

I would suggest you buy a good,basic cookbook and experiment and see what you like.Altho it's been in publication a long time and it has a tendency to be a bit heavy on dairy my recommendation is The Moosewood Cookbook by Mollie Katzen. The recipes are easy to follow and made with ingredients that are readily available. You can open it to any page and make a successful dish. Her recipes for hummus, tabouli, mushroom moussaka, lentil walnut burgers are all excellent.Her borscht, split pea soup, gypsy soup, vichyssoise are all excellent. I've used this book for years and I've taught cooking classes with recipes from this book. Except for the index in the original version,which was a disaster, this is a book you'll love. Those vegetables are a good selection, remember its the meat you will be replacing everything else can remain the same. Just bin the meat and eat the alternatives, beans, pulses, grains, nuts and seeds, soya, tofu and maybe mock meats such as quorn products. Even vegetarians dislike some vegetables.



Beans aren't vegetables, so you may like them. Quinoa is very high in protein so that would be good as well. What about green beans, squash, kale, mushrooms, etc? You can make a lot of things with the veggies you listed. Things like hummus and guacamole may also be good for you.



Gosh, that's plenty! You like more vegetables than I do, and I've been vegetarian for a couple of years now and I'm doing fine. There are plenty of things you can make with those, trust me!



well , there's always a salad made of cucumbers and tomatoes .they 're chopped in very little cubes and are juiced with a little bit of lemon.i eat it almost every day.it's so tasty! try it! :)
