What Can I do with Red Cabbage?
help!!

i have got a load of Red Cabbage and apart from using it for a salad what else can i do with it?

i would appreciate your suggestions.

Answers:

1.Braised red cabbage with apples and onions, with a touch of vinegar and honey.

Shred the cabbage and saute it on medium high heat in a bit of veg oil, stirring constantly, for 5 minutes, then add 2 shredded or finely diced apples and one diced onion and cook and stir for another 5 minutes, add 1/3 cup of vinegar (doesn't matter which kind) and 1/3 cup of honey or brown sugar or sugar and continue to cook and stir, add a pinch of salt and pepper and 1/2 teaspoon of caraway seeds if you like them. Cover and turn down the heat to low and let it cook for another 20 minutes. The cabbage will be nice and sweet and sour and glisten. Serve with buttered noodle kugel or a rice dish. like a rice pilaf.

2. Stir fry large diced red cabbage, quartered mushrooms and large sliced celery together and add a bit of soy sauce to taste. Really nice flavour.

3. Sautee finely sliced red cabbage with sliced onions in a bit of veg oil salt and pepper. Serve as a side veggie.

IT's really good if you saute it, with onions, apples and lemon juice. Saute til it all goes caramelly. Ooog, it's sooooo good, and spread that on toast, or stuff in a pita with cream cheese or soycheese.....



You can make a soup out of it (such as vegetarian Borscht). Or you can saute it with other vegetables and make something like a stir fry.



Great cooked accompanied by roast pork

Terrific as a pickle - keeps for AGES!!

And try blanching and freezing some - works well if you use it up fairly quickly.
