None,all vegetables can be eaten raw and are perfectly healthy to do so.
Potatos, carrots, turnips, onions, swedes, they're all fine raw.
Soybeans and lentils can also be eaten raw- soak them for long enough, and they go creamy and soft. I love soaking lentils for a week, then eating them, they're very tasty.



Root vegetables, like carrots, beets and parsnips, can certainly be eaten raw. Beans are better digested when sprouted and bean sprouts can be eaten raw, but the beans themselves are better if cooked.
