How should I cook my Acorn Squash tonight? I kind of want to stuff it with something. Any suggestions?!

Wild Stuffed Roasted Squash
1 cup wild rice
2 veggie bouillon cubes
2 acorn squash, halved and de-seeded
2 tablespoons olive oil
1 small yellow onion, chopped
2-3 stalks celery, chopped
1/4 cup chopped walnuts
1 teaspoon cider vinegar
1 1/4 teaspoons dried tarragon
1 1/4 teaspoons sage
dash garlic powder
salt and ground black pepper, to taste
Directions:
1. Preheat the oven to 400 degrees F. Start cooking the rice according to package directions.
2. Brush oil onto the cut sides of the squash, then put them cut side down in a lightly oiled casserole pan. Roast for 1 hour.
3. Heat the olive oil in a frying pan on medium heat. Put in the onion and saute it for 3 minutes, then add the celery and saute it for 2 minutes, then add the walnuts and saute until the onion is translucent and the walnuts are a little toasted.
4. If the rice isn't done yet, turn off the flame on the onion pan and stir in the vinegar, tarragon, sage, garlic, salt, and pepper. If the rice is done, add that to the onion pan with vinegar and spices. Continue heating it a little to meld the flavors. When squash is done, spoon the rice mixture into the cavity and voila!

I loved when I stuffed mine with pumpkin and made a vanilla sauce for it. Or use soft tofu and pumpkin spice and mix it well and stuff it.
The sauce was just vanilla almond milk, a little bit of whole wheat flour, and extra vanilla from extract. It came out pretty tasty.
Most of the serious ideas on here sounded good though. Why not stuff them with different things. mmmmmm

It's SUCH a good flavour, really caramelize the onion and cabbage, then stuff into the halved squash- add the nuts, pine nuts are incredible with this too. If you have soy parmesan, add that. It's amazing.
you should cook it with lots of cheese and steak. cook it using only the sun and a complex system of mirrors.
