How can I make this more of a meal?!


Question: How can I make this more of a meal?
I'm going to make Rice,sweet corn & pineapple (it's all mixed together in one dish, it's really good)
But I have no clue as to what I should serve with it. I'm trying to make the meal appealing to my friends (who I'm cooking for) that are meat eaters and me, myself I am not. I want something that will make them satisfied and not think "well where's the rest?"
Any suggestions?

If I was you I would maybe get some extra firm tofu and soak it in pineapple juices with maybe a hint of lemon and jalapeno juice as well for a hour or two. Then slice it up and low heat fry it in vegetable oil (olive can be to over powering sometimes with tofu I feel). Maybe buy some whole wheat fancy bread and warm it in the over and make serve it with it. Make some fresh tea.

Maybe prepare some kind of snack to for after the meal.

I love dark chocolate chips in soy yogurt (vanilla).

To me that sounds super tasty.

ps if they never had tofu i would slice it pretty thin and cook it to give it a slight crunch.

As someone suggested before making some tofu would be good, but I'd stay away from the pineapple and do either one of these marinades; spicy peanut, or teriyake marinade, or maple and mustard. You already have pineapple in the rice dish no need to have the same flavor for every item.

You could also make a curry soup dish, with the rice, and then a side of pita. I would warm the pita before serving though.



A more complete meal would be to put the corn and pineapple with other vegetables and mushrooms (if you like them) and stir fry them with a sweet and spicy sauce (try sweet chili sauce). Then serve over rice.

For a "fuller" experience, add in diced white potatoes and/or diced sweet potatoes, which are very filling.



i think that sounds REALLY nice!

can you add like raisins in it? but that is nt like mealish.
Serve with bread. (Pita bread or naan bread. garlic bread or baguetta... hahah!! lots ot choose from)
Or you can ake dough balls, or cheese balls!
or add small bits of chicken, or you can get Quorn chicken.
Or you can get Quorn sausages, and cut them up into the meal..... that would be nice. or have the rice dish on teh side and have something like.... Quorn meatballs or Quorn mince!!!



Make a lot of it. I don't advise cooking meat if you don't eat meat. They know you are vegetarian or vegan, so they should be fine with eating a vegetarian or vegan meal.



you can add chicken to it, but just put it on top of the rice after you plate it, so you dont get any...or take some rice out first, and then add the chicken



Definitely serve it with bread on the side. You could buy little rolls to bake or just take some whole grain bread and toast it. Offer butter, peanut butter, Earth Balance butter if you vegan, ect. to put on it. That meals sounds really good!
