some bacteria and fungi can function with or without oxygen but they tend to metabolise more slowly in the absence of oxygen.

I'd say that if
it was not frozen right away its just part of the normal process of decomposition.
even frozen it will decompose but at a far slower rate.
that is why you see an expiration date on every food we buy.



Probably because it's exposed to the air before it's vacuum sealed. That's my guess.



You posted your meat question in the vegetarian category. I makes no difference what color it is. It is still dead flesh. : (
