Anyone know of some good vegetarian cookbooks?!

Question: Anyone know of some good vegetarian cookbooks?
I'm not going to be a total vegetarian. I'll eat meat if it's not processed and I know it came from a safe, small farm. I'm still going to keep seafood in my diet though. But since fresh meat is harder to buy, I might as well learn some good vegetarian recipes for when we don't have it. Any recommendations?

Answers:

Any of Mollie Katzen's books are good (see http://www.molliekatzen.com/ and http://www.molliekatzen.com/archives.php for recipes).

Deborah Madison's "Vegetarian Cooking for Everyone" is superb. See http://www.deborahmadison.com/marketplac…

I prefer Mediterranean-style recipes, and Claudia Roden's books are great. They are not vegetarian, but many of the recipes do not contain meat, poultry, or fish. See http://www.amazon.com/Claudia-Roden/e/B0…

Mollie Katzen's : Moosewood Cookbook, the Enchanted Broccoli Forest
Vegetarian Epicure
Diet for a Small Planet by Francis Moore Lappe

Check out any books by Rose Elliot - technically it's vegan, but if like me when I was a vegetarian my intake of cheese and pretty much all dairy went up

Great healthy easy recipes by an inspiring author I think one book is called Vegan Feasts

I love the "Student's Vegetarian Cookbook" by Carole Raymond. Most of the recipes are quick & easy to make, and they typically feature common ingredients.
