I'm a vegetarian (not vegan) and I eat sugar but vegans did you know...?!
Answers:
The bones aren't found in the woods like easter eggs. they are bones from abbattoirs that have an excess after slaughter. The hides go for footwear and clothing, the fat goes for lard and solid fats for deep frying and the bones go for bone meal for gardens, Some of the hooves go for glue and gelatine. the stomaches go for rennet for making cheese..... aren't you glad that you know these things. Ignorance is not bliss.
Why do you believe that bone char is used? Where did you hear this?
I have looked at my local supplier, the only possibility is in "coarse media" used in the filtration process.
"Filtration
The 'settled water' is delivered through concrete channels to 12 gravity filters, which remove most of the remaining suspended solids. Each filter is a rectangular, concrete structure with a bed of sand supported by a layer of course media that is supported on a layer of pebbles."

I will email them and ask them to confirm whether they use bone char. Thanks, if it's true I had no idea. Not sure if there is a reasonable alternative, but it's food for thought.
