Whats a good vegetarian recipe that doesn't include tofu or eggplant ?!


Question: Whats a good vegetarian recipe that doesn't include tofu or eggplant ?
They are the only vegetables that I don't eat :)

any mexican recipe - replace meat with beans and/or morningstar farms veggie crumbles (made from soy, idk if your tofu limitations exclude actual soy but just in case)

Also, gnochi. I had curried gnocci recently, so now you don't have to try it.

or just by it premade then heat it. The gnocchi itself should always be vegetarian but is not always vegan.
When you have your gnocchi, add your favourite pasta sauce eg pesto, napolitana etc.

but, seriously, curry.

Magic Stone Soup.

I have a magic stone tied to a string. You just lower the stone into the boiling water contained in this very old iron pot hanging over the fire roaring its hearts content. Then when the stone is suspended in the bubbling water. Throw all those chopped vegetables you just love to eat and boil the guts out of them season with salt and pepper. Then stir for awhile then remove the magic stone and wipe for another day. Then sit down and enjoy the magic stone soup.
