then froze it in a zip lock back. Its crubly now instead of rubbery.

When you freeze tofu what happens is- the water pores ( tofu is full of tiny pores) fill up and freeze- ice is more expansive than water, so the tofu expands alittle.
The cell structure is not set larger , and the pores are bigger.
When it thaws, the holes stay large, and the lovely smooth texture is basically ruined.
It has a texture like a hard chewy sponge and quite crumbly, not flexible and rubbery.
It is FINE to eat, in fact some people prefer it to fresh tofu.
There are many recipes for frozen ( and thawed) tofu.
I hate the stuff. I'ts horrible and feels like a dish cleaning sponge is in your mouth. But it's perfectly OK to eat. You may like it, but I doubt that.
And yes, fresh tofu can go bad. It has a few weeks shelf life. If you keep it fresh, you must replace the water every few dyas, or keep it airtight.
Check the manufacturer's website and/or the package to see if they mention anything about how long you can store their product and still safely consume it. It is probably better to use fresh tofu, but it is up to you! Just be sure that it is safe to consume first.
