need vegetarian help?!


Question: Need vegetarian help?
my sister has 2 children that are day & night on what they eat

she has a 9 year old petite, dainty little girl
and a slim 7 year old boy.


her girl is a meat eater. the more meat the happier she is. she is a very hearty eater.
her boy is too but has decided he doesn't really like meat and don't want to eat it anymore.
she supports him and now gives him peanut butter and soy in place of meat. but she wants to know what else she can give him.

any suggestions?

Answers:

kids love roasted chickpeas- garbanzos.
You wouldn't think it, but all the kids I've given them to love them.
Get dried chickpeas, soak them a day , or canned will do.
If soking, cook after soaking for an hour- until they're cooked. If canned, drain and rinse.

Toss in olive oil, a little salt and pepper, and a squeeze of lemon juice.
Lay on a greased tray in the oven, on high heat. Roast for an hour, or until they are crunchy and crispy.
I swear kids love them

So, that for starters. Pita breads and hummous with cream cheese.
Pita with banana and honey.
CHeesy potatoes and baked tofu fingers.
SOydogs and ketchup and green peas.
Baked buttery noodles with soynuggets and sweetcorn,
broccoli pancakes with cheesy middle( put tiny broccoli florets in the batter)
Omelette with tomato sauce on toast.
Tofu kebabs- bake in the oven, after marinading them in peanut butter/soysuace. This is a lovely taste and kids love the kebabs on sticks. Best if you use baked tofu.
Use the peanut soy sauce as a dip.

Veggie kebabs- peppers, tofu, soydogs, little sweetcorn, baby carrots on a skewer, and a ranch dressing.
Brown rice and pecans with sticky sauce= sauce from brown sugar, lemon, butter- make rice balls with the pecans and some green peas. Eat with toothpicks and a salsa from tomatoes.

Lentil and rice lollipops- make rice and lentil patties, with sauteed onion, sesame seeds, spices and a little ketchup , form into small patties and dredge in seasoned flour. Fry in oil til crispy and serve on a stick.



There are many non-meat sources of protein, including almond butter, coconut milk, yogurt, cheese, nuts, and meat substitutes, like Morning Star and Boca. A lot of the items already listed are other good options.

Beans, whole grains, savory vegetables, seitan (wheat gluten) if he likes it, tofu and tempeh if he likes it (but probably not too much).

She should get The Flexitarian Table. It was a book written for families like hers.
