The word "enzymes" on cheese ingredients lists usually means "rennet" and/or "pepsin" - both are slaughter byproducts. If the manufacturer doesn't have the courage to specify, then you can assume the worst. It's rennet. Don't buy it. Don't eat it.
BTW, rennet doesn't come from animal bones - you're thinking of gelatin(e). Rennet is an enzyme which comes from the lining of a (dead) calf's stomach. There are vegetarian alternatives available for setting cheeses - sometimes plants, but usually bacteria. Choose those, if you have to eat cheese.
I have not heard of any cheeses that use animal bones. The "cheese culture" could well contain animal sourced rennet - you'd have to contact the manufacturer to be sure. In Australia now days I've noticed that the ingredients state "non-animal rennet" or "rennet". I avoid all things that just say "rennet".
