1st of all good for you for veggie choice! have you considered preping your means far in advance, of course as much as possible, like making a pot of veggie soup/stew & rice the day b4, then alls u need do is reheat. also maybe see about you just cooking once a week for family, telling them it is good for their health & you love them & want them around. have mom help as a way to include her. you could make simple things like tofu burgers, baked potatoes, salad, & a steamed veggie. all very simple & a full meal. good luck! a veggie mom & granny. =>:)

american heart assoc has website "Go Red for Women" not all veggie stuff but plenty of info on eating less red meat & less meats in general.
also a United Nations Multinational Study in 2006, titled "Livestock's Long Shadow" is Very informative on the negitive effects of meat industry & the consumption of meat products. come from an educated spot, then they will respect your choice more. =>:)

It would be nice if the schools gave you more of a healthy choice -

I go out with friends all the time who are cannibals, but it doesn't bother me in the least. If they want to eat meat, that is their right. I sometimes have to refuse certain restaurants because of the meals that are without any consideration of those who don't want meat as their meal.

I have found a better way to approach certain diners that pay very little attention to my dietary desires.

If I tell them that I am a vegetarians some seem to take it with a grain of salt and may ignore my wishes - but if I tell them that I am allergic to meats and that I can go into epilepsy then they pay much better attention to your order. I do it nicely but it does help.

I have been a vegetarian for a very long time (since 1967) and most will respect your wishes but some are just out and out walking ignoramuses.

My main reason for being a veg has to do with health - and it doesn't hurt to not eat flesh that comes closer to my fellow beings. LOL

The results of a vegetarian diet does not happen over night (like booze and chili peppers do) but the rewards do seem to matter as time goes by and the brain seems to enjoy it also.

It is not for everyone but try not to make it a separator of your friendships.

This red bean vegetarian chili recipe is pretty easy. You can freeze the leftovers for a future meal

or get your mom to make it, split it into 2 pots. She can then add sausage to their chili
