The best thing for malnourished children, would be the same things anyone else who's healthy should eat. That does not include anything listed on this Veg forumn.
Eat lean cuts of meat, nuts, while grain breads/oatmeal, and any fruits/vegetables you want. That's all anyone needs, and is unquestioningly the healthiest lifestyle option of anything known.
Most importantly malnourished children need protein, which can be found in meat, eggs and dairy products.
Then they need minerals and vitamins and a bit of fat and also carbohydrate.
So their meals should consists of these ingredients. For examples:
- Tuna Sandwich with lettuce will give carbohydrate, protein, vitamins and minerals. Fat can be obtained from the mayo put in it.
- Wonton Soup will do the same as Tuna Sandwich
- Any pasta in sour cream and mushroom sauce will do well too
and many more....

There are no deficiencies or lack of nutrients in a veggie diet which cannot be found in plant based food. There are easy substitutes for every meat product imaginable. Why are your children malnourished? Feed them an healthy diet of plenty of fruit and vegetables, beans and pulses, wholemeal bread, pasta, rice and cereals. Try soya and quorn products, they are a good source of protein. You could try them with recepes containing tofu. Marmite and honey on toast and if you are still eating dairy products then they contain some protein. Dont be fooled by the weak arguments that meateaters give, even the medical proffesion are admitting that meat is harmful it contains harmful chemicals and hormones that has been pumped into the live animal, it contains high levels of cholestrial. Eating animals raises the likelihood of developing cancers, heart disease, diabetes and obesity. Children that eat a well balanced vegetarian diet are healthier, i raised my three children veggie and they have grown into happy, healthy adults and now mv three young healthy grandchildren are vegetarian.
Eggs contains most of what you need of proteins and minerals. Course bread gives energy and fiber for the column to work. Orange juice gives energy and vitamin C that helps the body take up iron. Whole milk gives A and D vitamins and calcium. Liver pate is high on Iron which is good for the blood and oxygene transport that they need to make the energy come to work in the cells.
As a Chefs and nutrition teacher that's my advice for an EASY way with no difficult procedures to restore a healthy nutrition level.
Their columns bacterial environment can be in a bad shape if the food has been wrong or too little. So an additive of healthy bacterial cultures could also come in handy.
You don't say anything about the level or how they are malnourished so this is an all round answer.
Feed them fruit and rice, veggies, whole wheat PB&J or lean cut meat sandwiches through out the day, and for dinner a salad with a bunch on different veggies, and rather than the usual salad leaves, use spinach leaves. And also be sure to feed them tofu, nuts, and beans (beans are good for protein) .

It will be hard to find one single recipe that fills all the food groups. I suggest feed them what you want and then give them a multivitamin. The best vitamins for kids are either the flinstones vitamins or they have the target brand gummy vitamins for kids and adults.
