Why does the celery go limp in the crisper?!

Maybe the crisper is not sealed properly. Another way to store celery is to wash it and cut it up into pieces. Put the pieces in a container of cold water and place in the fridge. Change the water every few days and the celery should stay nice and crisp for a long time..
Just because it's called a crisper doesn't mean it can work miracles. The crisper is a separate section of the fridge to help retain moisture (because it doesn't lose moisture every time the fridge door is opened). I think you'd find that celery etc goes limp much quicker in the main section of the fridge. I have heard that wrapping the celery in foil helps it last longer, but I haven't tried it as our celery gets eaten pretty quickly (freaky I know).
It loses moisture to the air if not kept in an air-tight bag, or nearly air-tight, and refrigerators cause moisture loss even more.
All plants will "wilt" if they're cut off from their supply of moisture (in soil). You can see that if you stand the celery in a glass of water (bottom ends down) for awhile ...the celery stalks will suck up the water and un-wilt if they're not too far gone. Same for parsley/cilantro/or other stalk-and-leaf foods.
if you let it lie there for longer than 12 hours unwrapped, it will go limp as water evaporates from it.
Wrap it in a damp paper towel, then wrap it tightly in a plastic wrap- cling film or a plastic bag.
Keep it airtight and sealed.
