If you're a vegan, then the white pastry shell is carb's and carbs can make you tired. And it doesn't matter how thin, carbs are carbs.
Because there is barely any nutritional value in it, not to mention that the pastry and filling are high on the Glycemic Index scale, meaning that it gives you energy quickly, that burns off quickly. Foods lower on the GI scale burn off slower, giving you more sustained energy. You'd probably feel fine if you ate these along with some carrots or whole grain bread.
Did you cook it yourself? If you did it could be that you were tired after preparing this meal for yourself.
