How can I make a vegan kolacz (Polish wheel cake)?!
Kolacz is a favorite in my extended family, and I am going to attempt to veganize a kolacz recipe at http://easteuropeanfood.about.com/od/pol… because I like a challenge. I have some ideas for the topping and wash, but I'm not sure what to substitute for the eggs in the dough. Are they adding fat? Are they binding? Are they doing both? I'm thinking either 3/4 c. applesauce (and reducing the sugar) or 1/2 c plain soy yogurt. What exactly are the eggs doing in the recipe?
I'm also considering just making a vegan sweetbread with raisins and putting the topping and wash on top, but I don't know if the taste will be too far off from the original. I actually have never eaten this before, but I'm told it's supposed to come out fluffy.

Never tried that, and I was never much into baking (I was a breakfast chef) but I believe eggs are usually for moisture. Is it a very moist cake? If so, use more oil in the recipe. If not, the eggs may be for binding. But since its a dough rather than a batter, you might be ok without the eggs. Experiment and see how you go.
And wtf I thought all polish cakes had beetroot in them? We have a vegan chocolate beetroot cake where I work.
