can i freeze tofu and if so how?!


Question: Can i freeze tofu and if so how?
Answers:

i've seen a lot of recipes that have you do it, even moskowitz in a few. i trust her, the only thing i noted is that most say do not use silken tofu. so keep that in mind with it. it's supposed to make it chewier. i have not done it myself (i'm not a big fan of any tofu other than silken), but i've seen photos of success.

I am not 100% sure of this but thinking about the texture of tofu I would think that freezing tofu may cause it to break down as it thaws. Crystals form when moisture freezes. Tofu has quite a bit of moisture. As the item thaws the ice crystal break apart the item that has been frozen. the result, I would think, is that the tofu may get mushy.

Suggestion for you. Freeze a small bit. do this 2 ways, freeze a bit dry and see what happens when you thaw it out. Freeze a bit surrounded by liquid and see what happens when you thaw it out.

sure thing - if you buy the stuff that comes in a Tetra pack, it is fairly solid, so you can cut it into bite-sized cubes, lay them out on a non-stick surface (like a Tupperware box, and freeze them down - when frozen transfer to a small storage box.
