jeruslame artichoke - what do i do with this?!
i had my first organic veg box delivered the other day and inside it was some jerusalem artichokes. i have never cooked these before.
how can i cook these?
what suggestions do you have?

Gina - Sometimes they're called Sun Chokes, they are easy to grow perennials and contain inulin which means they carry some of their own digestion capacities. They are like treasure to dig up and a pain to peel besides which peeling takes away important nutrients just beneath the skin of most fruits/veggies. They do not keep well, so eat them right away.
I wash them well and cut them in half and steam them in a little broth until tender. THEN I grind some pink salt onto them or sprinkle them with raw cider vinegar and serve them up with melted butter as finger food. The soft pulp is bland & easy to eat, and if the skins are too tough for some, they can be discarded as pea pods are after shelling peas. This is a terrific food presentation for children and the elderly besides being very easy to digest.

Actually, you don't need to cook them, they can be eaten raw, washed, unpeeled.
They have a kind of water-chestnut texture. Otherwise, you can do whatever you want with them, such as add to a stir-fry or what-have-you. I wouldn't recommend boiling them. but cooking them quickly so as they remain crispy.
i usually like to saute them with garlic
just peel them and cut them into chunks, and lightly fry in an oiled frying pan until golden brown. then add a splash of white wine vinegar and a few cloves of garlic, seasoning and a bay or two
cover for 20 mins then remove bay leaf and leave lid off for a few more mins

You can use them any way that you would potatoes--although they don't get creamy when you mash them. The flavor's good, but the texture puts some people off.
But try them baked, or sliced thin and fried.
You eat it.
