What would vegans/vegetarians eat if they were allergic to soy?!
and to those vegetarians who don't eat soy what do you eat?

Not really, not in India anyway.
Lentils, chickpeas, fava beans, pinto beans split peas orange dal, pigeon peas, navy beans, lima beans, butter beans.
Pumpkin seeds, sunflower seeds , all the spread and butters and breads made with them ( 4 slices gives you a whole load of protein just from those seeds alone).
Walnuts, peanuts, almonds, brazil nuts, peanut butter, almond butter, cashews, pistachios.
I never eat "meat substitutes", nor would I expect meat eaters to eat vegetable substitutes. You need real food, and I dont care for replacing meat, because I don't really like it.
Gluten, seitan and other forms of protein and iron are easy to get too.
Nobody 99% depends on soy based meat substitute products. You would die. You need a well balanced diet and soy based meat substitute products cannot provide that. Plus you should keep in mind that A. most farmed animals are fed soy and most processed foods (talking non vegan and vegetarian) contain soy. I don't know what vegans you know but they probably like aren't real. (the like was not written as natural speak)
For myself if I was allergic to soy I would have few issues. I already eat mostly non-soy products. The pasta I made for dinner was flour and water, tomatoes, salt, extra virgin olive oil, spinach, onion, marinated artichokes and dried oregano with a little nutritional yeast on top. No soy anywhere to be found. It was delicious and I am sure anyone on here would gladly have scarfed it down with no issue. If I had had some mushrooms and maybe some roasted red peppers I could have made it even better.
Probably most people around the world eat soy and the few allergic to it can find other options. The average meat eater probably consumes/uses more soy than the average vegan. Regardless, exploiting animals for any reason is wrong and always has been and will be wrong.

I'm vegan and I don't eat much soy. I mostly stick to whole foods and sometimes that is soy (tofu, tempeh, edamame, I guess soy sauce, a little soy milk). Soy is just a bean and so if I couldn't eat it any more I'd switch to another bean. I guess I'd miss those things I mentioned, except soy milk since there are other milks, but I'd get over it.
for milk substitutes there are almond milk, hemp milk, rice milk.
soy is just a bean so you can sub in another bean. lentils, chickpeas aka garbanzos, black, red, etc.
and meat substitutes that don't include tofu, think veggies (veggie burgers, veggie patties)! portabella mushrooms make great "steaks"
there are also vegan pastas (no egg)
haha, I eat no soy. Soy is an endoctrine disruptor, so I stay away from it. You don't need to eat those expensive artifical nitrate packed veggie dogs. I eat lentils and legumes, and fruits, veggies, grains and almond milk
Something corn based. There are also other amazing vegetables out there.
