2 ) Should I use salt or seaweed as my Iodine source?
3 ) Coconut milk has 5 grams of Saturated Fat per severing. I drink two cups per day, so I can get my Daily Value % of vitamin B12 intake. Is this fine? Or is there a problem?

Yes, B12 and iodine are difficult to get as vegan.
You don't want to get too much iodine either.

Is the coconut milk fortified with B12? If not, it doesn't contain B12.
Most people recommend a pill or shots for B12. Depending on getting enough of it from food is very iffy. Besides, how do you know the B12 is from vegan sources?
ADDED: If you're a vegan because you don't want to support the dairy industry, you should know that Silk soymilk is owned by Dean Foods, one of the largest conventional dairy operations in the US. So when you buy Silk, you're funding a company that also sells regular cow's milk, too.
Seaweed is a good source of both iodine AND B12. An excellent vegan source of B12 is miso paste, which is fermented soybean paste. Before you get a chance to say "EWWWWW!!!", have you ever tried soy sauce? It's basically the same thing, but in paste form. The lighter-colored misos are actually pretty sweet. The darker misos have a richer more savory taste. They are all very salty, and should be used as seasoning. If you buy unpasteurized miso, you'll also be getting a lot of good healthy so-called "probiotic" bacteria, which help to regulate your digestion. Miso paste can be added to almost any kind of soup, stew or sauce in place of salt. Add it at the last minute, so that the heat of the stove doesn't kill off all the bacteria. It also makes a great sandwich spread if you thin in out with a bit of toasted sesame oil (YUM!), or any kind of oil, or even a bit of mayonnaise.
You can find miso paste in any health food store or Asian grocery. The ones in the Asian groceries are sometimes mixed with powdered bonito (a type or tunafish), so read the labels carefully. Many supermarkets will carry miso paste nowadays, too, but usually just the light sweet kind.
You don't need to worry about B12 deficiency. The daily requirement is in micrograms. Your body has enough Vitamin B12 to last a lifetime. You need to make sure you don't have any parasites in your body who eat away your B12. So if you do a parasite cleanse once a year or once in two years, you will be fine. I would say that 2 cups of coconut milk (regular not low-fat) is too much fat for a daily diet.
If you aren't having a problem with your weight, then I suppose you can keep doing it, but it doesn't sound healthy.
I take a multi-vitamin that has B12.
EVER read the nutrition label on Silk ENHANCED soymilk? It is Vegan and cruelty- free... no animal products or by- products r used by Silk brand! U should be amazed by what it gives u in terms of nutritional value.
