Does this salad sound good?!
I'm trying to make it with what I've got at home right now (not much unfortunately lol).
-Organic Baby Spinach Mix
-Already prepared Miso dressing
-Soft Tofu, cut into small cubes
-Thinly shredded Carrots
-Crushed unsalted peanuts
Then tossed and served cold.
To you healthy eaters out there, does this sound okay?

It does sound good.If you have time,you could toast the peanuts,warm them up in a small skillet or 5-10 minutes in athe oven.It would still be good if you didn't do that.I think it's very nice of you to do that for your friend.
It is really healthy because you got the veggies and the tofu has protein so it is very healthy for you.

I would use almonds or wanuts, instead of peanuts, but yeah...
be sure you "toss" it, I always try to get my salad tossed twice a week.
