Does anyone know of any delicious TOFU recipes?!

My favorite cheap and fast tofu recipe is as follows:
One package firm tofu
One bag frozen stir fry vegetables
One teaspoon freshly grated ginger
3/4 cup store bought peanut sauce.

First cook the vegetables, then cook the tofu separately. Combine in hot pan and pour peanut sauce on top then serve immediately. Fast and delicious!
