How do I prepare "vegetarian" style collard greens so that they're palatable?!
Answers:
Lightly steam the leaves then add sauteed garlic and olive oil.
Two great options for if you're not a big fan of collard greens in the raw:
1) Green Smoothies! Mix them with fruits of your choice, maybe some juice and ice, and wha-la! You can barely (if at all) taste them. Oranges and apples have a nice strong taste that can help mask the veggies, and bananas are great for making the smoothie creamy.
2) Baked Kale (or other Collard Green) Chips! Seriously try them--they're delicious!

I like them sauteed with a bit of garlic, sea salt, lots of pepper and balsamic or a squeeze of lemon.
