I'm a vegan but there are other dietary needs that I cater for. I have some friends who are allergic to gluten, so I don't cook with gluten or wheat when I'm making food for them. Some friends are allergic to nuts, so I avoid that as well. Some friends of mine won't eat processed foods or soy, so I only make them natural or soy-free foods.
Even if a friend doesn't have an allergy, if s/he just doesn't like a certain food, then I don't cook it. I'm a good cook so having to omit an ingredient here and there doesn't mean that I'm at a loss for what to make.

Yes,
I cater for carnivores by serving up some meat substitutes like "Quorn". The result is always a discussion on how great it is, yet without the greasy texture of meat. People ask why they have never heard of it before and why has noone thought of setting up Quorn takeaways.
As a bonus the house does not smell like a tannery for days afterwards.

Yes I do. My daughter is a Coeliac, my daughter in law is allergic to peanuts and my sister in law in vegetarian. So I cater for all their dietry needs when they visit.
