Veggies - need some help for a veggie christmas dinner?!

She's 14. That's old enough to contribute to the effort of cooking a holiday meal. By that age, I was regularly cooking meals for the whole family (once a week or so, to help my mom). So, what you do, is ask her to plan and prepare a dish that will provide protein for herself, and will appeal to the rest of the family as a side dish, to go along with the rest of the holiday meal. Since you have a small kitchen, you might wish to specifically ask her to choose something which can be made ahead, and warmed up quickly. Alternatively, she could plan her day's meals to have more protein at other meals, then simply partake of the side dishes which do not have meat in them at the family meal.
What we always have is cheese and lentil loaf. Its really simple to make and taste really good.

Maybe your daughter needs to try some more things, being a vegetarian means that she need to get into eating protein foods like nuts but lentils are a good alternative for this.
Family dinners
Maybe you could take her to the supermarket or health food shop and let her choose something.
Then explain that if she wants something other than the veg you are having she will have to cook it herself but the day before.
You can easily make a vegetarian gravy for her though.

She's vegetarian and does not like vegetables or nuts? Good luck. I enjoy tricking people into eating vegetables. I make dumplings or empanadas for picky eaters and if they ask what is in it I lie. I've done it to my brother and a few friends. As long as they don't have food allergies it's all fun and games.

Morning Star brand food, there's many options my fave is the fake chicken nuggets! It also contains a serving of vegetables and protein!
Tell her to eat what you eat or she gets nothing. You should not a 14 year old tell you what she is going to eat.

There must be some vegetables she eats! Other wise just serve fruit. Maybe she would like stir fry, it is quick and easy and gives taste to the veges. Oil - chopped veges (broccoli; carrot/pumpkin/sweet potato; snow peas; zucchini; peppers; mushrooms (are nice done separately with only oil) - heat - After vegetables are lightly cooked add quarter cup or less of a little mixture of water and sugar [ Asian thin soya sauce or a sauce of preferred flavour can be added to this] drive the fluid off to glaze the sugar and serve. Of course tofu is added by some and rice or other starch can be served with this.
A nutritionist may help unless there is a behaviour issue.
