Vegetarians. What good meals did you eat or make for Thanksgiving yesterday?!

Question: Vegetarians. What good meals did you eat or make for Thanksgiving yesterday?
Hope you all had a Happy Thanksgiving.

Answers:

Haha aww, thanks Scooter. Love your Santa hat, by the way!

I enjoyed myself to some corn pudding, stuffing, cranberry sauce, green beans, sweet potatoes, squash soup, and last but not least...pear & cranberry pie with dairy free ice cream on top. :) You can bet I was stuffed to the boot. We took a nice long walk afterwards...I needed it.

Happy late thanksgiving. :)

I had tofurkey (with rice-based stuffing) for the first time ever--Had Thanksgiving at my friend's house (who's a Vegetarian) and she got it. Also had mashed potatoes (made with rice milk, topped with mushroom gravy), corn, cranberry sauce, green beans, black olives, ... and I think that's it. It was good. :)

Hope your Thanksgiving went well, Scooter!

I am a vegan.
I ate stuffed acorn squash (stuffed with pecans, cranberries, and homemade vegan friendly stuffing), mashed potatoes (rice milk and vegetable broth instead of skim milk and chicken broth), cranberry sauce, crescent rolls (Pillsbury Original are vegan!), and steamed parsnips and carrots.

For dessert I ate a raw apple pie.

I ate dinner with my non vegan family so i brought a vegan turkey made out of gluten, vegan mashed potatoes, vegan cornbread, vegan stuffing, and i also brought a homemade vegan pumpkin pie. I enjoyed all of the food and even my family tried it and liked it to.

the sweet potato casserole with pecans and marshmallows is delicious. i do mine with eggs and milk, so if the veggie person eats eggs, no problem, but you can substitute the eggs for orange juice.

while i am not a vegan, i had a whole loaf of frosted cinnamon bread, dunked in morning coffee. i just kept going. happy Thanksgiving to you Scooter.

The nursing staff at work has a tradition of a huge T-day potluck so I had vegetarian dressing, Texas caviar, broccoli casserole, green bean casserole, crescent rolls, fruit and pie! I was stuffed!

Tofurky

I ate pomegranates, soy beans and kiwi!

Vegan meatloaf and vegan fudge.
