Well I am also a vegetarian, and belive me it is not easy! here are some healthy tips:
salads,rice,pasta,pizza,mexican wraps,noodles,toffoo,vegi- burger hot dogs or home made subway, and finnally my favourite foods...SOUP OR NACHOES!!!

I'm veg and here's what I pack for school lunch
Fruit usualey an apple but could be pear peach plum orange or clemontone
main course sandwich usualey pbj creamcheese cheese and veg peperini bean pasta soup mac n cheese quickly made pasta quesidialls with beans peppers tomatoes cheese and other fillings or hummus in a container with arabec bread for dipping
sides bar (bleuberry apple strawberry fig)
crackers cheese cheese stick Oreos yogurt chocolate chip cookies candy veggies like carrot cauliflower pepper cucumber

Rice and beans pack well. And with the fiber, it's pretty filling.
And homemade pasta sauce doesn't necessarily doesn't need to be really time consuming. I make a marinara sauce from tomato paste, some red wine and some garlic and other seasonings and simmer it for 10 minutes or so. I will throw in some ground beef too but you can leave that out if you want. Maybe throw in some vegetables. But seriously, it takes longer for me to boil the water for the pasta than it takes to make the sauce.
i agree with soccer kid, soup is really filling. try looking up a recipe for minestrone soup online but loading it with chunky veggies and beans, with orzo (the kind with grain if available) and making it like a stew. it really fills you up (prob b/c of the liquid) but pair it with some bread or he'll probably get hungry again. i know fresh veggies can get expensive though. i feel your pain. use frozen veggies too they're fine. i usually make a big pot and it can last me about 3-4 days. good luck! and you seem like a really good friend, props to ya! ;D
