What would be a GOOD vegan option?!
I myself am a vegan. Actually pretty strict. I ALWAYS look for the healthiest option. Well, and every now and then. I like to treat myself. I believe it helps you stay on track, instead of the usual, mundane food I eat everyday. I think what it comes down to, it Number 1. My heath! Number 2. My appearance.
I wanted to treat myself today to a unique vegan lunch. I live in Scranton, and there is this awesome vegan restaurant. I've been there actually a number of times. The only thing. I've only tried what appears to be the healthiest items on their menus. So, can you conscious vegan/vegetarians help me find something that is satisfying, with healthy benefits.

So... what would be some good healthy options?
Thanks!

My concern is that you want strangers to pick your meal and that you call healthy eating "mundane." If you think it's mundane, it's your lack of creativity, not the food.

You should check out Schrute Farms, they have excellent beets and a superb array of themed guest rooms.
