Chillis have been harvested...?!

Question: Chillis have been harvested...?
We were hoping to turn our chillis red by leaving them on the plant but the weather has spoilt our plans there. So we've harvested 27 chillis. We've actually done really well. We got over 40 from 4 plants which were reduced at our local supermarket :-) and cost 76p in total. In the past when we've bought chillis and left them they've gone bad. We thought if we dried them they'd either get hotter or just keep the same strength. We had considered freezing them but thought they might lose some of their strength. Anyways my question is how do i successfully fry them? We live in a very cold house and don't use the heating much and they are chayenne and cayenne repress. Thanks in advance x
