Easy vegan sandwich fillings?!


Question: Easy vegan sandwich fillings?
Hi, I want to start taking sandwiches to college with me and was wondering if anyone had any ideas on what I could put in them?

I'm a vegan, and want something that's cheap and quick to prepare so nothing like baked tofu/grilled veg etc. I just want to be able to put it together in a couple of minutes.

Good for you for wanting to take healthy and yummy sandwiches to eat.

my favorite sandwiches are:
tofu: (you can get it pre-marinated) with lettuce, tomatoes, mustard.
hummus: with spinach, cucumbers, tomatoes, bell peppers
veggie burger: (Amy's California style are delicious) with spinach, tomatoes, mustard, ect.
plain tofu: with tomato sauce and spinach
soy cheese: and guacamole or avocados
fake meat: if you eat it with veganase, mustard, lettuce and tomatoes
black beens: smashed with tomatoes and lettuce
mashed chickpeas with lettuce, tomatoes and avocados
peanut butter and jelly
my grandpa has peanut butter and lettuce (but i think its weird. )
almond butter and jelly
plain peanut butter
plain almond butter
just jelly
tofu: scrambled with broccoli, spinach, squash, tomatoes
those are just a few ideas, feel free to mix and match, good luck.



A couple of minutes to assemble, but requires a bit of preparation the previous night.

Suggestion 1: Grated carrot (from the previous night's preparation), sunflower seeds, alfalfa sprouts, sultanas. Salt and pepper are optional. The carrot may make the bread go soggy, so you'll need to spread a layer of something on the bread to prevent that - vegan margarine or Tofutti? Better Than Cream Cheese? or something similar.

Suggestion 2: Mix a tablespoon of tahini, half a tablespoon of miso paste and a tablespoon of hot or warm water in a small bowl. Make sure you mix it well to get rid of any lumps. You may wish to do this the previous night, store in the fridge, then spread it the next morning.

If you find you have more than a couple of minutes, how about avocado with slices of kiwifruit and a pinch of salt. It's well worth the time and effort.

Then of course there are the old favourites: hummus; peanut butter and jam; tahini and molasses (ok, that one's not so old); marmalade (ginger marmalade is to die for); yeast extract (if you like a salty/umami taste).

Mich Mich: I don't know about where you live, but where I live Nutella isn't vegan.

Nutella or Peanut butter w/ Jam.
Soycheese LT
Raspberry, Blueberry, Blackberry Jam
Orange Marmalade
Cucumber and Vegan cream cheese - open face
Stir-fry vegetables and tofu
Tomato sauce and noodles
Onions and Carrots.



Peanut butter, vegan cheese slices with vegannaise, tomato slices with vegannaise, PB with another sliced fruit like bananas, and sliced avocados can go in sandwiches.

Vegan



PBandJ, Eggless Egg Salad, Veggies and vegannaise, Tofurkey slices, vegan "meat" like bologna, mix mashed chick peas with vegannaise for vegan "tuna"...



Peanut butter and jelly
whole wheat pita filled with hummus and veggies
mexican wrap (whole wheat tortilla filled with peppers, onions, avocado, lettuce and salsa)



Pb&J, hummus and tabbouleh, hummus and tomato, vegan meats and vegan cheeses, avocado and sprouts.
